For hot new Parisian restaurants, there is no economic crisis. The most recent just opened in Passage des Panoramas, in front of the wine bistro Racines. What you get is simple and uncomplicated (vegetable platter, terrines, oyster and veal tartar). In the kitchen is a chef formerly of Aida, and in the dining room are a bunch of young go-getters.
A very nice wine list that’s short, but solid. It was impeccable the first night. Get moving.
